Hey, long time no write. It’s been a while since I’ve had the perfect storm of time, motivation, & content to finally make a post here, but today is that day. I feel like it’s time to update, clarify, and honestly just write again. And it feels good to be back! Life has been moving fast lately, but the past few months have been full of incredible experiences. I can’t even fathom how quickly summer’s going, and how much I’ve grown in such a short time. Robin’s Egg Cupcakes
It’s Easter! Easter’s one of my favorite holidays simply because there’s so much to look forward to: pastel colors, flowers in bloom, Easter basket hunts, and (in non-covid times) family gatherings. I love how cheery and refreshing it feels after a long winter! However, if for some reason that’s not your thing, you’re actually in luck, because today’s recipe is a cause for celebration all on its own. These Robin’s Egg Cupcakes are elegant, delicately flavored, and incredibly moist and fluffy. I swear you’ve never had vanilla cupcakes this good. Springy, in both texture and season!

Easter is just a few days away! I know that chocolate bunnies and sugary jellybeans are usually the treats of choice for this holiday, but let’s not forget that Easter lines right up with citrus season. That’s right: as the tulips bloom and the air gets sweeter, so do the oranges. It’s the perfect window for baking, so I couldn’t help but bring you an even-more-perfect recipe to celebrate with! We’re kicking off the equinox with a zingy, delightful dessert that tastes like springtime on a plate: Blood Orange Loaf Cake.
My Winter 2021 Favorites
The world is thawing and it’s finally spring! The transition from winter to spring always seems to inspire growth, but this year it feels more transformative than ever, what with the vaccine rollouts. I got my first shot yesterday (my arm is so sore!!) and cannot wait to see the opportunities it brings. It’s amazing how quickly we’ve been able to open eligibility for people!
Perfect Açaí Bowl
As summertime approaches, I’ve been revisiting one of my favorite warm-weather meals: açaí bowls! Just the name invokes memories of salty air, cute coastal restaurants, and watercolor sunsets over the ocean. However, you don’t need to fly to the tropics to enjoy an açaí bowl. My version can be made at home in 10 minutes, and it’s divine. Plus, you’ll dodge all of the preservatives and added sugars/fats in store-bought bowls! We’ll call it like it is: this is the Perfect Açaí Bowl.
Spicy Shrimp Rabokki
Today, I’m sharing what might be the best recipe I’ve ever posted on this blog: Spicy Shrimp Rabokki. I mean it when I say that this dish, inspired by Korean street food, is absolutely delicious. It features springy ramen noodles, stir-fried shrimp, and a special ingredient most Americans haven’t even heard of. I am so impressed at how authentic and takeout-like this recipe tastes with only a few simple ingredients! If you’re someone who loves trying new flavors, then my Spicy Shrimp Rabokki is for you.

Today I’m bringing you this absolutely delicious Butternut Squash Mac & Cheese. It’s got an addicting savory flavor, two types of cheese, and is even halfway good for you! I made this in the fall when squash was all the rage, and it very quickly became a fan-favorite in our house⏤ so much so that we had it for New Year’s Eve dinner.

Happy New Year’s Eve! I cannot believe how quickly this year went by. It seems like just a few weeks ago we were soaking up the sun and worrying about starting school again.
